If there's one thing I always look for at breakfast it's a super simple recipe I can prep ahead of time, that's packed with healthy ingredients. Really great for gut and digestion, full of fiber and good oils. Which doesn't take much thought, and can be bunged in the oven and not thought about again until I need it. This recipe ticks all those boxed for me, and it tastes sooo good too.
I love this recipe for a go to speedy, tasty, healthy breakfast during the week (which my kids also love once I'm done adding all the good stuff like chocolate and honey!) Simply add greek yogurt or milk and you're good!
This is such a versatile recipe you can use for so many different things and they'er all super quick and easy so it's a great thing to have on hand for mid week breakfasts when you're in a rush for work or the school run.
Ingredients
Mixed nuts/ seeds
You can pick up a simple bag of raw mixed nuts from the supermarket. Mixed nuts usually contain peanuts, hazelnuts, walnuts and almonds and are packed full or nutrients protein and fiber to assist your diet.
Rolled oats
A great source of fiber and protein rolled oats offer slow releasing energy to make you feel fuller for longer
Desiccated coconut
Desiccated coconut is full of healthy fats and minerals helping to contribute to a balanced diet.
Honey
Packed full of antioxidants, vitamins, minerals and sugar, honey makes a fantastic healthy sweetener to uplift any dish. Be sure to melt in a double boiler or in a bowl over boiling water as microwaving diminishes the minerals.
Cinnamon
A warming spice to bring a warm flavour to granola complementing the sweet a bitter flavours,
Coconut oil
One of the healthiest cooking oils available coconut oil offers a gentle flavor. Coconut oil provides a well rounded blend of nutrition.
Dark chocolate
Adding a sweetener like dark chocolate chips can cut through the bitterness of the nuts and seeds to depth and a high quality dark chocolate can be full of antioxidants.
Ground Flax seed
A really great addition, high in fiber and omega 3 fatty acids, that you won't even notice is there.
How to make a simple granola
Put the honey and coconut oil in a double boiler or a heat safe mixing bowl over a pan of hot water to melt.
Empty the pack of mixed nuts and seeds onto a chopping board and use a sharp knife to cut into small pieces.
Add the nuts and seeds, rolled oats, desiccated coconut and cinnamon to the oil and honey mixture and mix.
Evenly spread the mixture on to a baking sheet and pop in the oven on a low heat until golden brown.
Once baked, leave at room temperature to cool
Add the dark chocolate and ground flax seed once cooled
Storage
Store in an air tight container for up to one week or in the freezer for up to 6 months

100g Coconut oil
50g Honey
20g Cinnamon
200g Unsalted mixed nuts
150g Rolled oats
100g Desiccated coconut
100g Dark chocolate chips
25g Ground flax seed
Method
Preheat the oven to 100°C (200°F) or Gas Mark 1.
Melt the wet ingredients: In a double boiler, or a heat-safe mixing bowl over a pan of simmering water, melt the honey and coconut oil, stirring occasionally until smooth.
Chop the nuts: Place the mixed nuts and seeds on a chopping board and roughly chop them into small, bite-sized pieces.
Mix the dry and wet ingredients: Add the chopped nuts, seeds, rolled oats, desiccated coconut, and cinnamon to the bowl with the melted honey and coconut oil. Stir until everything is evenly coated.
Bake: Spread the mixture evenly onto a lined baking sheet. Bake in the preheated oven for approximately 1 hour 30 minutes, or until golden brown, stirring halfway through for even baking.
Cool: Once baked, remove from the oven and allow the mixture to cool completely at room temperature.
Add chocolate and store: Once cooled, stir in the dark chocolate pieces and ground flax seed. Store in an airtight container for up to a week.
