Colourful Meringue Kisses

These are a colourful meringue kisses have a huge bang for the buck, not only being super cheap and easy to make, they are a great gift or table decoration you can whip up days in advance before you need them!


If you're looking for a delightful, visually appealing treat, these colourful meringue kisses are the perfect choice. These super cute sweet treats not only burst with flavour but also add a pop of colour to any occasion.

I chose to make mine a simple and delicate vanilla flavour here but here are a few different options you could go with! Bear in mind some of these could effect the colour of the overall meringue. You could even use different coloured food colouring to create the stripes for different flavours, to really jazz it up a bit.


-Peppermint (Use peppermint flavouring)

-Almond (Use almond flavouring)

-Strawberry/ raspberry (Use crushed freeze dried strawberries/ raspberries)

-Chocolate (Use coco powder)

-Coconut (Dust with desiccated coconut just before baking)


Storage: Store these Colourful Meringue Kisses in an airtight container for up to 5 days at room temperature.

Equipment Needed:


Ingredients:

- 3 egg whites (at room temperature)

- A pinch of cream of tartar

- 175g caster sugar

- 1/2 teaspoon vanilla paste (or other optional falvourings)

- 2-3 Various colours of food coloring gel of your choice

- Food-safe paintbrush


Method:


1. Preparation: Preheat your oven to 60°C and line a baking tray with parchment paper.


2. Whip the Egg Whites: In a stand mixer, combine the egg whites and cream of tartar. Whip until stiff peaks form.


3. Incorporate Sugar: Gradually add caster sugar, one tablespoon at a time while still whisking, ensuring it's fully combined each time.


4. Add Flavor: Mix in the vanilla bean paste and set the meringue mixture aside.


5. Prepare Piping Bag: Cut the tip off the piping bag and attach the piping tip/ nozzle. On a plate, create a palette by placing small amounts of your chosen various food coloring gels.


6. Colour the Piping Bag: Using a food-safe paintbrush, paint straight lines of different colours inside the piping bag, from the tip to the open edge, avoiding colour blending.


7. Fill the Piping Bag: Place the meringue mixture into the piping bag. Don’t worry if the colours blend slightly; it will even out as you are piping.


8. Pipe the Kisses: Pipe small kisses onto the parchment-lined tray. Initially, the colors might not be perfectly distributed, as the gels tend to run down the bag a little, but as you continue, the mixture will even out.


9. Baking: Bake the meringue kisses for 4-6 hours at 60°C, depending on your desired chewiness.


10. Storage: Once cooled, store these colourful meringue kisses in an airtight container for up to one week at room temperature.
